Here in Dorset it was a joy to see blue skies and sunshine today. How is your weekend so far?We’ve just finished spending a day in the garden. What are your best French pancake hacks? We’ve shared a few and would love to know what works for you …We keep a heavy based pan especially for our crepes
It is simply wiped out with a eco kitchen cloth after use.Try to get ahead (not always easy!) & make batter an hour ahead.The heat in the pan is crucial. Too cold creates leathery pancakes and too hot will create a lacy appearance with burnt edges.Take a breath and allow ourselves time to find the ideal heat.Lisa’s top tip for AGA owners is to use the roasting oven floor to gently preheat the pan.Try using clarified butter to cook your pancakes.
